We can find all these features in the new “Piccolo Principe” menu, the two Michelin stars restaurant in Viareggio, at the Grand Hotel Principe di Piemonte.
The à la carte menu is synonymous with elegance and refinement, with passion and attention to detail, with the enhancement of raw materials and the desire to dare.
In the starters, in the first and second courses, land and sea, classicism and an eye to the future coexist together. That is how we let ourselves be transported by the unique taste of the crunchy rock mullet, the smoked Tuscan sushi, the 48 hours cooked veal tongue, the tortelli pasta with cheese and pepper, the tagliatelle of spelled flour and blueberry, by lobster and goose liver, by duck to tamarind.
With the 5 special tasting menus, the multi-starred chef Giuseppe Mancino will accompany you on journeys among courses that become experiences for the palate and the mind. It happens with the paths “Il Mare”, “La Terra”, “Vegetariano”, in the 10 courses of the special “A modo mio… between past and present”, in the emblematic “The essential”.
The goal of the Piccolo Principe Gourmet Restaurant is to make these experiences accessible to everyone. This is why the chef has paid particular attention to all those who follow special dietary regimes or suffer from specific intolerances. That is how the special “Vegetarian Tasting Menu” is born, an authentic novelty of this 2018 that combines the ingredients allowed by the vegetarian diet as never before. Without forgetting those who suffer from celiac disease, who will discover many new dishes. Finally, a special attention to the final courses that acquire even more depth and centrality throughout the whole gastronomic journey thanks to a menu totally dedicated to desserts.
