At the Gourmet Restaurant Il Piccolo Principe in Viareggio, at the Grand Hotel Principe di Piemonte, on the city’s promenade, the chef Giuseppe Mancino, to which the 2 Michelin stars have been confirmed, proposes five different tasting menus for the 2018 season to explore his cuisine and some of the best products in the territory.
Therefore, taste, aesthetics and technique will be protagonists in surprising dishes and many times with a pleasant unexpected result.
Tasting menus starred restaurants in Tuscany 2018
The first tribute is dedicated to the sea, with a six-course tasting menu featuring impeccable raw materials and daring combinations for a delicate and unforgettable result. As it happens in the “Scallops plancia style, salmon egg, avocado, vegetable consommé” or with the “Ravioli of rice flour, crab, sea snails, black garlic, seaweed powder and yellow tomato”.
Another six-course course with the “Land” tasting menu where the imagination and creativity of the “Smoked Tuscan Sushi”, Masoni’s beaten, fried bread, seasonal truffle Savini Selection, pecorino cheese and bitter herbs” or the pleasant tradition of “Char-grilled pigeon, white beans, sautéed herbs and spelled beer sauce”.
A real innovation is the attention to particular diet. This is how the “Vegetarian” tasting menu is born, in which emerge the “Tortelli cheese and pepper, saffron egg cream, Salawak pepper, seasonal first fruits” and the sweetness of “Chamomile, Lime and strawberries. The Chamomile Cremoso and his plum cake, strawberry soup and lime gel”.

Those who want to abandon themselves totally to the guide of the chef in a path made of perfumes, colours, flavours and unexpected sensations can make it by choosing the tasting menu “My way … past and present”, a gastronomic experience of 10 courses.
Appetizer, starters, first course, pre-dessert and dessert are, instead, the stages of the special tasting menu “The essential”, a real preview of the kitchen of the “Piccolo Principe”, in which the guest will taste land and sea courses to approach the philosophy of chef Mancino and his team.
